While looking for ways to prepare eggplant, I found this on a website called Chubby Vegetarians and thought I'd try it.  My daughter loves bacon and me being vegetarian, I hate to see her eat it.  I am making this for her from now on cause I know she will love it.  I sure did.

Sweet Smokey Eggplant Bacon

6-8 strips leftover grilled eggplant (1/8 inch thick, drizzled in olive oil, & grilled) I used my George F. grill

1/2 cup flour

1/2 cup vegetable oil
brown sugar
black pepper
Sweet Smokey Eggplant Bacon w/ Egg white Omelette

Over a medium flame, heat vegetable and sesame oil in a frying pan until you see the oil shimmer. Dredge the strips of eggplant in the flour. Pan-fry each strip of eggplant in the oil for about 3 minutes per side or until golden. Remove strips and palace on a paper towel or paper bag to drain. While strips are still warm, sprinkle each with a little brown sugar, black pepper, and a little hickory smoked sea salt. This will give your "bacon" the old familiar smoky, salty, sweet triple-punch you were used to. (This can also be made with fresh eggplant, but leftover grilled eggplant just adds another layer of smoke.)

Enjoy

As Digital Underground would say, "All around the world same song, same song, all, all around the world same song."  Everyday I Sing The Same  Song.  Not a song of cheer and excitement, but that same ole broken record my mom used to sing to me, I sing to my child on a daily basis.   "Pick up your clothes.  Did you wash your face? Did you put on deordorant?  Brush your teeth, put on some lotion, GO TAKE A BATH!!!!!..

As the owner of SMB Personal Fitness, Inc., I try to apply the Spirit, Mind, and Body teachings at home as well as in the work place, especially with my 9 year old daughter.  She is very intelligent, talented, creative and head strong.  She can prepared a meal fit for Kings, change electrical cords on appliances, replace the radiator in a car but when it comes to cleaning and simple hygiene she will NOT, do them UNLESS she is told EVERY SINGLE DAY.   Is it just me?  HELP!  I GOT THE BLUUES.

Is this a personality thing?  Maybe the simple tasks in life are not important enough for her to remember.  If I put it on a list with boxes for her to check off as she go the results are amazing but I shouldn't have to run do that, or do I.

I ask my baby sister who has two kids, my sister-in-law and  three of my closest and oldest friends for advice.  You might as well call them the Supremes because they are singing the SAME SONG.   They all said, "Join the club,"

"I have to turn the radio on loud so McKenzie can sing in the tub or she doesn't want to do it.   I need YOUR HELP big sis."

My sister-in-law says, It's an epidemic.  I used your check list and Breanna still forgets so put a care package in her bookbag."

"Sorry, I battle that with Jalen every morning.  Not to mention that I have to keep AX body wash to entice him to take a bath!"   I guess the advertisement has something to do with that.  My child has to have a bubble bath with lavender oil, candles and a book to get more than her feet wet.  Complete with an eyes mask, radio Disney and a final tuck from me or dad.

One after another they responded with the SAME SONG.  So I say to myself, "Self, maybe this is a phase they go through and by age 10 I can change my tune."....NOT.  I made sure the advice I was asking was from friends with kids of all ages.   My friend Shannon from college has 13 and 16 yr old girls.  Guess what, she is the president of our club.  She said.   "I don't have to tell my 16 yr old anymore but my 13 yr old, yes!  She's getting better.  Just keep preaching & teaching and let her know either you will tell her, or she will learn on her own when someone else embarrasses her.  Happy parenting!"

Now I Know Why My Mother Sang The Blues....She was being a good mother.  I Shellita Marie Boxie will continue to be a good mother too.  "I wrote a song bout it, like to hear it, hear it go."

Woke up dis monin..dunt dun dun dun dunt..to get my daughter ready for school, dunt dun dun dun dunt, try not to fuss and fight with her, dunt dun dun dun dunt cause it just ain't coooool.  But she don't seem to get it, dunt dun dun dun dunt, what to do on her own, dunt dun dun dun dunt so I find my self singinnnnng the same ole' song...I got the bluessss.  I got the every mother in the whole wide world going through the same thing with their kids parenting  bluessss...ohhhh, ohhhh yeaaha.

Please share your parenting stories with us.

What??? No, it's not what you think. I am talking about the tentions we carry around on a daily basis, especially when we are working out.

Next time you are off on your venture to get fit, notice your posture. Are your shoulders rolled back and pulled down away from your ears? Are you standing straight up with all your pivot points in alignment? What about when you run....ARE YOUR TOES CURLED IN YOUR SHOES?

I am here to say, "Relax, Relate and Release" those muscles and enjoy your workouts like you enjoy your favorite dessert or beverage. Uncurl your toes and be graceful.

Have a nice day

For blessing me with 3 days of work in my acting career and with one NEW personal training client.  Although I am a vegetarian, I was a happy camper in the taco joint yesterday shooting with two members of the New York Yankees.  Teheeeeee.  Good thing they didn't ask me to eat the food.

Someone asked me a great question that I decided to share my reply with all of you.

Q: What is the best way to start a plan, with a full body detox or..?
A: Not everyone will and need to do a full body detox but I like to start all my SMB Personal Fitness clients off as fresh as possible when battling the buldge. It is best to consult with a nutritionist or your doctor but from personal experience, for a successful detox, Slowly (over a 30 day period) wein yourself off in this order: all alcohol/ breads/pasta/sugars, oats and graines, red meats, chicken, fish until you are down to fruits and veggies only. Drink lots of water. No longer than 2 weeks of fruits and veggies only than gradually add the fish, chicken, whole graines back and only eat the processed foods occasionally. Some people can go cold turkey all at once but doing it slowly keeps it off and you no longer crave the foods that makes you sluggish and over weight. Enjoy
P.S. don't forget the workout routine. Keep it fun and keep it regular. Let me know how you do.
